Recipe: Wild Rice Casserole 

Ingredients
  • 1 lb. ground bison
  • 1/2 cup chopped onion
  • 3/4 tsp. pepper
  • 1 cup wild rice rinsed and drained
  • 3 cups water
  • 1 T butter
  • 2 cans mushroom soup
  • 1/2 cup white rice
  • 1 can sliced water chestnuts drained
  • 1 can Chinese vegetables drained
  • 1 (4 oz.) can mushrooms sliced
  • 1 cup diced celery
  • 2 T. soy sauce
  • 2 soup cans water
How to prepare
Bring to boil 3 cups water and 1 T butter, add wild rice and reduce heat and simmer for 55 min. or until done. In the mean time brown ground Bison, onion and ¾ pepper. In a large casserole put mushroom soup and 2 soup cans water and stir well. Add all of the ingredients and stir well. Bake at 375 degrees for about 1 hr. Add more soy sauce to taste is wanted. May have to add more water. (do not add salt, as the soy sauce is salty).
